Introduced quote currency entity, repository, and service for managing quote currencies in the wallet. Added REST endpoints to retrieve and update quote currencies, and implemented initialization logic to populate quote currencies from configured symbols. Updated API and proxy layers to fetch quote currencies from the wallet service.
